Line 2 baking sheets with foil & coat with vegetable spray. Slice zucchini/squash into 1/4" thick rounds and toss with oil. In wide bowl mix breadcrumbs/parmesan/salt/pepper. Coat both sides in parmesan-breadcrumb mixture. Bake in single layer for about 22 to 27 minutes until golden brown. (No flipping)

Place rounds in a single layer on baking sheets. Sprinkle any remaining bread crumb mixture over the rounds. Bake 22- 27 mins until golden brown.
