    Yummy Parmesan Baked Zucchini - 1 lb. zucchini or squash (about 2 medium-sized) 1/4 cup shredded parmesan 1/4 cup Panko breadcrumbs 1 tablespoon olive oil 1/4 teaspoon kosher salt freshly ground pepper to taste. Preheat oven to 400 degrees. Place on cooky sheet and drizzle with extra virgin olive oil and sprinkle with ingredients and bake for about 23 minutes. Bon appetit

Line 2 baking sheets with foil & coat with vegetable spray. Slice zucchini/squash into 1/4" thick rounds and toss with oil. In wide bowl mix breadcrumbs/parmesan/salt/pepper. Coat both sides in parmesan-breadcrumb mixture. Bake in single layer for about 22 to 27 minutes until golden brown. (No flipping)

    Zucchini Parmesan Crisps 2 med zucchini 1/4 c shredded parmesan 1/4 c Panko bread crumbs 1 T olive oil 1/4 t kosher salt pepper, to taste Preheat oven to 400. Line baking sheets with foil and spray lightly with oil Slice squash 1/4" thick. Toss with oil, combine bread crumbs, cheese salt & pepper. coat both sides, pressing to adhere. Place rounds in a single layer on baking sheets. Sprinkle any remaining bread crumb mixture over the rounds. Bake 22- 27 mins until golden brown.
