Roasted Lemon Garlic Herb Shrimp: olive oil, lemon, garlic, thyme & fresh shrimp baked in glass baking pan in 400 degree oven for 10-12 minutes. I served this over Lemon Linguine w/ Garlicky Breadcrumbs (see 11/11/14 pin for pasta recipe). It was spectacular! I added stir-fried greens and shredded carrots on the side. I liked the combo as much as my other fave shrimp recipe: Honey Grilled Shrimp (on allrecipes.com). This is my new favourite way to cook shrimp. Made 11/11/14 RM
Roasted Garlic Herb Shrimp 1/3 cup olive oil 1 lemon, zested then half cut into thin slices and other half into wedges 3-4 fresh thyme sprigs, leaves removed sea or kosher salt and fresh black pepper spaghetti/pasta, couscous or rice for serving 1 pound fresh shrimp, medium-sized, deveined with tails off 5 cloves garlic, minced 1. Preheat oven to 400 degrees F. In a 9×13 baking pan combine olive oil, lemon zest and thyme. Season with salt and pepper. Bake in oven for 12 minutes. Meanwhile cook pasta, couscous or rice. 2. Remove pan from oven, add shrimp, garlic and the thin sliced lemons (don’t squeeze them), toss to coat with oil mixture. Bake for 8-10 more minutes or until shrimp turn pink and start to curl. Serve over pasta, couscous or rice tossed with extra-virgin olive oil and fresh-squeezed lemon with additional lemon wedges for serving.

Cheesy Cauliflower Puffs Mashed potatoes aren’t the only game in town! I recently spied a recipe for cheesy mashed potato puffs and wondered if I could modify it for mashed cauliflower. Since cauliflower contains more liquid, I knew that I’d need to add something to give them a little more structure. Beaten egg whites did the trick. They do shrink some as they cool, but they make a delicious low carb side dish for any meal. Ingredients: 1 medium head cauliflower, cut into florets 3 cloves garlic 1/3 cup sour cream 4 ounces cheddar, grated 1 tbsp dried parsley 3/4 tsp salt 1/4 tsp pepper 2 large eggs 2 egg whites Preparation: Preheat oven to 400F and grease a non-stick muffin tin well. Set a steam basket into a large pot and fill the bottom with an inch or two of water. Add cauliflower and garlic to pot and set over medium heat. Steam 7 to 10 minutes, or until quite tender. Drain well and transfer to a food processor (including garlic cloves). Puree until smooth and transfer to a large bowl. Stir in sour cream, cheddar, parsley, salt and pepper. Stir in eggs until well-combined. In a separate bowl, beat egg whites until quite stiff but not dry. Gently fold egg whites into cauliflower mixture until just combined. Divide evenly between prepared muffin cups and bake 18 to 22 minutes, until puffed and set and golden brown. Remove from oven and serve immediately. Broccoli and Cheese Mini Egg Omelets Weight Watcher Recipes Servings: Makes 9 cupcakes • Old Points: 2 pts each • Points+: 2 pts each Calories: 103.9 • Fat: 6.5 g • Carbs: 2.7 g • Fiber: 1.2 g • Protein: 8.7 g Ingredients: * 4 cups broccoli florets * 4 whole eggs * 1 cup egg whites * 1/4 cup reduced fat cheddar * 1/4 cup good grated cheese like pecorino romano * 1 tbs olive oil * salt and fresh pepper * cooking spray Directions: Preheat oven to 350°. Steam broccoli with a little water for about 6-7 minutes. When broccoli is cooked, mash into smaller pieces and add olive oil, salt and pepper. Mix well. Spray cupcake tin with cooking spray and spoon broccoli mixture evenly into 9 tins. In a medium bowl, beat egg whites, eggs, grated cheese, salt and pepper. Made this tonight: Loaded Cauliflower Casserole. Good mac & cheese substitute. Bacon, garlic, green onions, cream cheese, heavy cream, etc. Creamy & flavorful. I used ~1Tbs more of heavy cream than the recipe called for & 1/2 as much green onion, maybe less. Could easily cut recipe in 1/2 & have plenty for a side dish. Next time: use 8-10 pieces of bacon instead of 6 & maybe pour a little bacon grease into the mixture for bacon flavor. Use slightly less grated garlic & try gourmet cheeses.
