I halved the recipe and there was still more than enough batter to make 12 huge muffins. I subbed butter for the oil, increased the sugar by 1/4 cup, subbed half the white sugar for brown sugar, and added a tsp pumpkin our spice. I used frozen blueberries and increased the blueberries by half a cup. The batter was really thick but they baked up beautifully.
