This is our favorite way to eat broccoli of all time! My husband says he would rather eat this than fries. I put a few Tbsp of olive oil in a ziploc with some salt and pepper and the broccoli and shake. Then spread on a cookie sheet and spread minced garlic over it and roast at 425 deg F for 20-25 minutes.
These carrots are amazing! First carrot recipe I've found that I like! Roast in the oven at 400 degrees for about 20 minutes with some seasoning and a little olive oil (I used curry powder). The recipe said two pounds but I used one. Then drizzle with about 2 tablespoons of olive oil, 3 tablespoons of honey, and about 1 teaspoon of balsamic vinegar (I added a touch more vinegar). Pop them back into the oven for about 5 more minutes to achieve sweet, salty, still slightly crunchy perfection!
Fresh zucchini topped with a parmesan herb crust and baked until it's crisp yet tender. This is one of those foods that's so good you have to stop and close your eyes after a bite. Seriously delicious!
