Skinny Mom's Greek Yogurt Enchiladas -- I do Greek yogurt instead of sour cream

Sour cream chicken: Lay the chicken close together on a foil lined baking sheet. Sprinkle with salt, pepper and garlic powder. Coat with a thick layer of sour cream. Top that with the crushed croutons and then dot with the butter. Bake in a 375 degree F oven for 25-35 minutes.

Skinny sour cream enchiladas • 16 oz. fat free sour cream • 1 can fat free cream of chicken soup • 1 tbls. fresh chopped cilantro (1/2 tbls. dried) • 2 1/2 cups cooked shredded chicken breast • 1 can Mexican Rotel • 1 cup chopped onions (optional) • 8 low carb tortillas • 1 cup shredded pepper jack and colby cheese blend • 1 can diced green chiles

Sour Cream Chicken - My review: this is a keeper recipe. Easy and fast to make. Only substiution I made is to use crushed french fried onions instead of the croutons (I didn't have any). I also just melted the butter and drizzled it over the crumbs (faster than "dotting" with butter). We liked the French fried onions so much that I'm unsure if we'll try it with the croutons :)
