Cowboy Caviar: 1 can black eyed peas, drained and rinsed, 1 can black beans, drained and rinsed,1 can shoepeg corn, drained and rinsed, 4-5 Roma tomatoes, seeds removed and diced, 2-3 diced avocados, ripe but still firm, 4 green onions, sliced thin (I used 1/2 purple onion diced finely because that's all I had), around 1/2 to 3/4 cup Zesty Italian dressing, 1/2 bunch cilantro, chopped finely,1-2 limes, ground pepper, and salt to taste!
Fruit Salsa with Baked Cinnamon Chips (This was so good, and I left the sugar out of the salsa.) 2 kiwis, peeled and diced 2 Golden Delicious apples - peeled, cored and diced 8 ounces raspberries 1 (16 oz) carton of strawberries, diced 2 tablespoons white sugar (more or less to taste) 1 tablespoon brown sugar (more or less to taste) 3 tablespoons fruit preserves, any flavor (I used strawberry) 10 (10 inch) flour tortillas melted butter or butter flavored cooking spray Cinnamon sugar: 1 cup white sugar 2 Tablespoons cinnamon
1 can black beans, drained and rinsed 1 can sweet white corn, drained and rinsed 2-3 roma tomatoes, diced 2 extra large avocados (or 3 regular), diced 1/2 bunch cilantro, finely chopped 1/8 cup lime juice, more to taste salt to taste Toss everything together in a large bowl, do not over-mix. Serve with tortilla chips.
