Xalyo, Somali Halwa - Authentic halwa is made with ghee and a generous amount of spices (cardamom, nutmeg, and saffron) and rose water. Saffron is very expensive, therefore Somalis use food colouring instead. To further keep costs down, most halwa shops use oil instead of ghee and they skimp on the spices. Some halwa recipes call for toasted peanuts or toasted sesame seeds which are added just a couple of minutes before the halwa is done. It is usually served with Qaxwo (traditional coffee).
