That means high grade salt, it means pepper ground right in front of you by a pepper mill. It means fresh herbs and it means REAL BUTTER. The good news is that these are all things you should already have in your house. Take 1/2 stick of butter, softened, and mix well with the peeled, chopped garlic, the chopped herbs, and the lemon zest. Form into a log and refrigerate. Generously season the filet's with salt and pepper, approximately 1 teaspoon of seasoning per side. Heat the remainder of the butter (1/2 stick) and the olive oil in a cast iron skillet to a screaming hot temperature. Preheat your oven to 400 degrees. Sear the filets in a screaming hot pan for about 2-3 minutes per side, or until a nice brown crust has formed. While the steak is searing, continue to spoon the residual butter in the pan on top of the meat while it's cooking. Once both sides are seared, place in the center of the oven for about 6-8 minutes, depending upon how thick your steak is. In the last minute of cooking, take the log of compound butter and slice a nice thick piece to place on top. Your steak will be ready when it is approximately 135 degrees in the center, or when you push lightly on the top center of the steak and it gently and slowly bounces back. (Note, this is medium rare kids. Some people don't like to eat cows while they are mooing, so clearly you can cook longer if your afraid of the pink.)

Hawaiian Grilled Chicken **Marinate this chicken at least 4 hours, I prefer overnight!! Growing up my parents would take us camping on a regular basis. It usually consisted of going with their friends Jerry and Cathy, and Jerry made one mean grilled chicken recipe. He called it "Polynesian chicken" and it was salty, garlicky and slightly sweet with a perfect chargrilled flavor. As the years passed on my parents lost touch with their dear friends and just recently reconnected with them. Hearing my Dad talk about their plans to meet back up with their long time friends had me thinking about that Polynesian chicken! I quickly googled for similar recipes, but didn't find any recipe that had ingredients in it that triggered my memory. I was thinking soy sauce, garlic and maybe some type of sugar..simple and flavorful ingredients. A disappointing hour later, I decided to just give up and hopefully bribe my Dad to gently ask his friend for the secret recipe! The next day before calling my Dad, I signed into blogger and just started scanning some posts in my google reader. If you can believe this...there was a post for "Hawaiian Grilled Chicken"! Seriously. Top ingredients...soy sauce, garlic and brown sugar!! Shut the oven door! This was exciting. I made it that night and it was everything I remembered from my Dad's friend..only....dare I say it? BETTER! Now, I know it's not called "Polynesian chicken" but ya know...whatevs! Oh and yes I'm a white meat kinda girl myself but don't let the use of chicken thighs scare you. They are moist and much more flavorful--trust me..you will thank who ever originated this recipe blog post and blog post back! Ingredients: 3 pounds of boneless skinless chicken thighs 2 cups low sodium soy sauce 2 cups water 1 1/2 cups brown sugar 1 bunch of green onions, chopped (save some for the top) 1/4 cup white onion, chopped 1/2 teaspoon minced garlic 1 teaspoon of sesame oil 1 (13.5oz) can of coconut milk Directions: 1. Remove visible fat from chicken thighs. Mix soy sauce, water, brown sugar, onions, garlic, sesame oil, and coconut milk in a large bowl. Marinade chicken for at least 4 hours or overnight. 2. Grill chicken at a low heat so that the marinade does not burn for 5-7 minutes per side or until done. 3. Serve with rice or noodles, top with green onion and additional soy sauce. **I served this with coconut rice as recommended from the original blogger. When making your rice, just simply replace half of the water amount with coconut milk.

Foolproof Prime Rib….Perfect Everytime! | And other recipes for a dinner party or Christmas feast. 1. Get a prime rib roast at your supermarket. It’s usually labeled bone-in ribeye roast. 2. Mix up equal parts of onion salt, seasoned salt, and garlic powder. Approx 1/4 cup total. 3. Pat the salt mixture on both ends and the fat side of the roast. The salt may not stick as well on the fat side. Don’t worry about it. 4. Pre-heat oven as high as it will go. Usually 500 degrees, but NOT broil. 5. Stick the roast in a dutch oven preferably on a small rack that will lift it off the bottom. Bone side down (fat side up). Get a meat thermometer and stick it in the middle of the roast. 6. Cook the roast in the oven for 5-6 minutes per pound and then shut the oven off. DO NOT OPEN OVEN DOOR FOR TWO HOURS UNDER PENALTY OF DEATH. 7. After two hours take it out and check the temp. If its 140 degrees it’s perfect. If it’s cooler, put it back in the oven at 375 degrees until it hits 140 degrees. 8. This procedure will yield a PERFECT MEDIUM RARE PRIME RIB. (Don’t ask me how to do medium or well done because cooking prime rib roast past medium rare is a felony.) 9. Get a package of Au Jus mix in the spice section of your supermarket and make following directions. 10. INVITE ME OVER FOR DINNER.
