Confit D' Oignon - French Onion Marmalade

Vegan • Gluten free • 1.5 hrs to make • Serves 1


6 Bay leaves
3 kg Onion
6 Rosemary, sprigs


1/3 cup Balsamic vinegar

Baking & Spices

1 1/2 tsp Black pepper, ground
1 lb Brown sugar, soft
3 tsp Sea salt

Oils & Vinegars

1 1/3 cup Olive oil
1 cup Red wine vinegar

Beer, Wine & Liquor

1 cup White wine, dry

Serve it with charcuterie, terrines & cheeses; it is wonderful added to vegetables, soups, stews, daubes or as a sauce for steaks. I also use it for tarts, quiches & grilled cheese sandwiches.
