Anyone can prepare these delicious meatloaf pancakes using lean ground turkey, bell peppers, onions, garlic mushrooms, eggs, and zucchini. For a more consistent texture, use oat bran or bread crumbs. Add a variety of spices such as thyme or sage, red pepper flakes, Italian seasonings, and mustard. Mix all ingredients and divide into several meatballs. Homemade Mozzarella - Oh goodness, there is nothing better than hot, fresh mozzarella (also, you can skip the rennet & use a few tablespoons of lemon juice with no change in flavor or texture).
Homemade mozzarella I’ve been using this recipe for some time now. Though it comes out a little different every time I make, it is a big hit. You’ll never want to go back to store-bought mozzarella once you try this delicious and easy homemade version. Ingredients 3/4 teaspoon citric acid*, dissolved in 1/2 cup of cold water 1/4 rennet tablet*, dissolved in 1/8 cup of cold water (where to find) 1/2 gallon whole milk. 1/2 teaspoon sea salt kitchen thermometer Directions Pour milk into a large, heavy pot over medium-high heat. Add the citric acid/water mixture, and stir gently until milk reaches 90 F. Remove pot from heat; slowly stir in the rennet solution, using an up-and-down motion with your slotted spoon. Cover and let rest for 5 minutes. Then inspect the curd; it should resemble a custard if pressed gently with your finger. When you reach the point where your cheese curds have set into a soft, custard-like consistency, cut a cross-hatch pattern into the curds using a long, sharp knife. Then, cook your curds to 105 degrees before draining of the liquid whey. Once your cheese curds are cooked and drained, heat them until they can be stretched. Stretch the cheese and fold it back on itself. If it tears, add more heat and fold in salt. The more you fold the cheese the more string-like it becomes.Tear off pieces and roll into balls, serve warm with olive oil and sea salt.
Mozzarella is a fresh cheese made from pasta filata or pulled curds, a method that gives the cheese its chewy texture & fresh flavor. Campania, the region in Italy that claims Naples for its capital, is the epicenter of Italian mozzarella making. Much of the mozzarella made in Campania starts with water-buffalo milk, which gives the cheese a special tang and complexity of flavor. According to the people of Campania, mozzarella di bufala should be eaten within 3 hrs after it’s made- a luxury not available to us in the states. But fortunately we do have excellent mozzarella di bufala flown in on almost a daily basis. When buying imported mozzarella look for the kind that has been packaged in its own whey and is sealed tightly with plastic. The cheese should be firm & moist, not falling apart or very soft; it should be sweet with a pleasant tang, but not at all sour. Regular milk mozzarella is also made here in the states & it is quite good, we make it continuously during the day at Eataly as do many other Italian specialty shops & restaurants. It is best to use mozzarella once the package is opened, but you can keep it for a day.
