Easy potato and bacon breakfast casserole-it was excellent. Loved the bacon. I have only had sausage breakfast casserole before so it was a fun change. Next time use smaller chunks of potatoes and maybe one more egg. Also add 15-20 minutes to cooking time because eggs were not done.
