Ingredients: 4 cups ice 1 cup chilled pineapple juice 1/2 cup blue curacao 1/2 cup rum 1/2 cup cream of coconut 4 pineapple slices 4 maraschino cherries Directions: Place the ice, pineapple juice, blue curacao, rum and cream of coconut into a blender and puree until smooth. Divide evenly among 4 glasses and garnish each with a pineapple slice and a cherry.
~PEACH DAIQUIRI~ Ingredients: 1 cup frozen peaches, 1 dash vanilla extract, 1/4 cup lime juice, 1 tbsp superfine sugar, 1 1/2 oz light rum, 1 cup crushed ice, 1 oz peach schnapps, 1/2 oz apricot brandy. Combine the peaches, lime juice, rum, schnapps, brandy, vanilla, and sugar in the blender until smooth. Slowly add the ice with the blender running and process until smooth. Serve in chilled cocktail glasses.
