Ice Cream Bread - This sounds so good! You say you don’t have any self-rising flour? No worries, you can make your own. For every cup of flour add 1 1/2 tsp baking powder and 1/2 tsp salt (sift together).
I freeze ice cream scoops full of mashed potatos. Use yukon gold (russets do not freeze well) and add a little sour cream, bacon, whatever. Microwave for 30 seconds or so and vvoila....part of a fast dinner.
TACO PASTA - 1 lb ground beef, 8 oz small dry pasta shapes, 1 small onion, 1 clove garlic, 1 C salsa, 1 packet taco seasoning, 3 oz cream cheese, 1/2 C sour cream, Salt & pepper, Shredded Cheese for topping
