Coconut Chicken with Apricot Sauce. I made this tonight and it was super good. Definitely a great way to spruce up boring chicken :)

Coconut Chicken | this was my first recipe using coconut milk. I expected something different but it was good. It kind of tasted like chicken a la king with neat spices. It calls for cinnamon and basil. I added cardamom and curry because I had them and rarely use them. I served this with rice and broccoli. The kids liked. That's a huge plus.
