Caribbean Coconut chicken---used 1/2 the coconut it called for, sub'd evaporated milk instead of sweetened condensed and it was ok. next time try 1/2 can coconut milk and use the other 1/2 of the can to make a sauce to go over it all, that would be awesome! try again before a recipe card Coconut Shrimp, Chicken Chili, Dips Sauces, Coconut Milk, Chilis Dips, Coconutchicken, Chicken Breast, Coconut Chicken, Sweet Chilis

Coconut Chicken | this was my first recipe using coconut milk. I expected something different but it was good. It kind of tasted like chicken a la king with neat spices. It calls for cinnamon and basil. I added cardamom and curry because I had them and rarely use them. I served this with rice and broccoli. The kids liked. That's a huge plus.
