    hash brown egg cup - I used actual hashbrowns and since mine were frozen I cooked them in the skillet for several minutes until they were tender. I also put bacon bits in my cups and did about 1/2 a bag of hashbrowns and that made 5 ramkin cups. Better than the two that the recipe said it made.

    Baked Eggs Napoleon, you can make this in a muffin tin for an easy breakfast. Need to find some GF tater tots, hashbrowns, or fries.

Eggy Cups! cut circle out of slice of bread, using cookie cutter or drinking glass; wrap piece of bacon around outside of bread, place in greased muffin tin. sprinkle grated cheese on bread, top with one egg. bake in oven till egg is the way you want it and bacon is crisp.

Made these baked eggs today! Hybrid of this recipe and another. Buttered the ramekin (lightly!), put in 2 tsp. heavy cream, three eggs, some browned pancetta and topped with a mix of Romano cheese, chopped fresh thyme, and chopped fresh rosemary. Baked at 375 for 15 minutes. Served with toast made from crusty bread. In short - AWESOME!
