HOMEMADE PIZZA SAUCE: 6 Tb Tomato Paste, 2 Tb Extra Virgin Olive Oil, 1 tsp Garlic Powder, 1 tsp Onion Powder, 2 tsp Dried Oregano, ½ tsp Sea Salt, 1½ tsp Pure Maple Syrup, 2 Tb Red Cooking Wine (optional but good), ¼ c. Water ~*~ Place all ingredients in a small saucepan. Whisk together until well combined. Place over low heat & cook until heated through. Taste & adjust seasonings if necessary.

SLOPPY JOES with AVOCADO & FRIED EGG • Ingredients • Tomato Sauce: 15-oz can tomato sauce, 3 Tb brown sugar, 1½ Tb red wine vinegar, 1 Tb Worcestershire, 1 Tb Dijon, 1-2 tsp crushed red pepper flakes, 2 Tb tomato paste • Meat Mix: 2 Tb vegetable oil {for sautéing}, 1 small diced onion, 2 minced garlic cloves, 2 tsp chili powder, 1 lb ground sirloin, Kosher salt, Freshly ground black pepper • Sandwich: 4 toasted hamburger buns, 4 fried eggs, Sliced avocado

BACON-CHICKEN-MUSHROOM PIZZA with CREAMY SPINACH SAUCE • Ingredients • Dough: 2 ½ C warm water, 1 Tb yeast, 1 Tb sugar, 1 t salt, ¼ C olive oil, 4-6 C flour • Sauce: ¼ C butter {or part bacon grease, part butter}, ¼ C flour, 1-2 minced garlic cloves, 1-2 C milk, 4 oz cream cheese, ½ t salt, ½ t pepper, 4 oz chopped baby spinach or ½ pkg frozen chopped spinach • Additional: 3 C shredded mozzarella, 1 C shredded cooked chicken, 9 oz pkg sliced mushrooms, ½ lb cooked/crumbled bacon, Add’l salt


Harissa Spiced Shakshuka Baked Eggs

FRIED EGG & AVOCADO SANDWICH ~ Ingredients: 4 slices bacon, 2 Tb butter @ room temp., 4 slices toasted wheat bread, 4 oz cream cheese @ room temp., 1 tsp minced fresh parsley leaves, 1 tsp minced green onion, 1/8 tsp each salt & ground black pepper, 2 large eggs, 4 slices tomato, ½ avocado {peeled, pitted, & sliced} ~ okay yum! mouth watering, delicious, all of the above & the pics for the dish: incredible!

WHITE PIZZA GRILLED CHEESE: Mix ½ C whole-milk ricotta cheese with 2 t olive oil, 1 sm minced garlic clove, 1 Tb fresh/1 t dried basil, 1 t fresh/½ t dried oregano, ¼ t kosher salt, cracked black pepper. Let marinate in fridge 1-24 hrs to let flavors develop. Spread on 2 pieces of bread, place thin layer of mozzarella {8 oz total} & some Parmesan {¼ C total} in middle, rub outside w/garlic, & butter generously. Toast until outside is crisp golden brown. {Yield: 4 sandwiches}
