Jalapeno Creamed Corn- The Only Side Dish You'll Ever Need. I used frozen corn, but it was seriously scrumptious.

Lightened Up Jalapeno Creamed Corn 1/2 cup of I Can't Believe It's Not Butter Light, 8 ounces light OR fat free cream cheese, room temperature, 2 cups of reduced fat sharp cheddar cheese, 3 jalapenos, seeded and finely diced (or more if you like some heat!). The 3 seeded jalapenos creates zip, NOT heat. 2 bags of frozen corn, thawed. Mix all ingredients together in a 13x9 pan. Bake uncovered in a 350 degree oven for 40 minutes. Stir again before serving. Enjoy!!

Jalapeño cream corn. The only side dish you'll ever need! I did: Shoepeg corn (3 cans drained) 1/4 cream cheese block, scoop of butter & sharp cheddar cheese. Add fresh jalapeño & bake until warm & bubbly. It's yummy.

Made this a few weeks ago!!! Pretty amazing, but next time I will definitely leave some seeds in the jalapeno for some added spiciness ;)
