      Zucchini Parmesan Crisps 1 lb. zucchini 1/4 cup shredded parmesan 1/4 cup Panko breadcrumbs 1 tablespoon olive oil 1/4 teaspoon kosher salt freshly ground pepper, to taste Preheat oven to 400 degrees. Line two baking sheets with foil= spray vegetable spray. Slice zucchini or squash into 1/4 inch-thick rounds; coat with oil Combine dry ingredients and toss rounds in it. Place rounds in a single layer on baking sheets. Bake, 22 to 27 minutes

      Zucchini Parmesan Crisps - 1 lb. zucchini (2 med), 1/4 c shredded parmesan, 1/4 c Panko, 1 T olive oil, 1/4 t salt, freshly ground pepper, to taste - Preheat oven to 400. Place zuc slices in Panko mixture -coat both sides & press to adhere. Place zuc in a single layer on baking sheets. Bake for 22-27 min, until golden brown.
