Vegetarian Cheese Tortellini Soup, this was pretty good and a very easy recipe. It was a little too strong with all the vegetable broth, I think either I will make my own broth or put in half the vegetable broth and then do water for the rest.
Spinach Tomato Tortellini Deb cut the recipe in half since 12 servings was too much. Then substituted the following: Used 1 large can (28 oz) diced tomatoes. If I had petite diced, I would have used that. Used about 2 cups plus of spinach. Used 1 cup cream (think it's a half pint). Used 1 cup skim milk.
MY REVIEW: heavenly. tomato and cheese tortellini soup! I used progresso tomato basil soup instead of the tomato soup and I served with grilled cheese on a cold rainy day! My boys loved it so much that it is now our official rainy day soup!
