Jamaican Toasted Coconut Cookies: Butter, sugar, vanilla, coconut, baking soda and flour

  • Michelle Weidner

Jamaican Toasted Coconut Cookies - taste like sugar cookies with a hint of something extra. Mish: These are more like chewy butter cookies. I did enjoy the exceptionally chewy texture produced by the coconut, but the flavor was mostly butter. I'd have preferred more of a coconutty flavor. 3 out of five high-fives.

Coconut-Sesame Rice by An Edible Mosaic. I’ve found that almost everyone has their own way of making rice.
