      LEMON RICOTTA PASTA w/ PEAS & SEARED SCALLOPS. 1 box fettuccine; 12 lg fresh sea scallops; 4 T oil; 1 T butter; zest of 1 lemon; ¼ c lemon juice; 1 ½ c green peas. 4 T frsh thyme (pref lemon thyme); sea salt; black pepper; 475g cont ricotta. Cook pasta. While cooking rinse scallops, pat dry. Heat 1 T oil, 1 T butter in skillet on high til foamy.
