Chicken+Peanut Butter Lettuce Wraps iceberg or romaine lettuce leaves Filling: ½ to ¾ c. chopped Fuji apple (about 1 apple); 1 c. cooked chicken (I boiled mine with salt, pepper,+onion); 20 red grapes, halved; ½ c. chopped red onion; ¼ tsp. salt Sauce: 1 Tbsp. light mayo; 1 Tbsp. honey; 1 Tbsp. all-natural creamy peanut butter Mix all filling +then pour sauce+mix. Spoon into fresh, crispy lettuce leaf+roll it up. Makes four lettuce wraps.

Banana split breakfast? I made this as a quick dessert one evening since I had loads of bananas and didn't feel like much effort. I had a homemade blueberry sauce and and used greek yogurt and topped with a crunchy granola. YUM!
