Two words: MEAL PREP A great way to save money, eat healthy and reach your new year's weight-loss/fitness resolutions is to take an hour or two during the weekend to prep your meals for the week. Here are some tips to help you maximize your time and effort! (adjust as needed for your own diet, lifestyle and tastes) 1. Make a list and a plan! Take a few minutes to think about your dinners, lunches, breakfasts and snacks for the week and remember it's ok to repeat meals! Now use those meals to make a specific shopping list. 2. Go fresh and organic when possible, but it's ok to go frozen! There's good frozen grilled chicken and steam-in-bag veggie options out there that can helps save on money and time. Buy in bulk when possible and look for deals at the store! 3. Chicken for dinner? Bake a bunch of breasts (better yet, a whole chicken!) all at once instead of just enough for the one meal. Line a pan with tin foil, wash chicken, season with favorite salt-free seasoning (I usually do 1/2 of the chicken in onion & herb and 1/2 lemon pepper), and bake for ~1 hour at 375-350 degrees. 4. Prep all your other "long cooking" items like brown rice, sweet potatoes (bake whole or sliced with the chicken in a separate pan), lentils, etc. so they can get going. 5. Organize all the Tupperware you'll need so you can start filling it up and visualizing how you'll distribute your food! 6. While food cooks, chop up fresh/raw foods like veggies (carrots, kale, celery, radishes, cucumbers, cauliflower, broccoli, Brussels sprouts, etc). 7. Once food is all cooked and chopped, divide up into portions into all of your containers and store in the fridge. An example meal might be 1 cup mixed veggies, 1/2 cup carb (sweet potato, rice, quinoa, etc), 3-4oz protein (chicken, turkey, hard-boiled eggs, salmon, tuna, etc). 8.
