Granola Pudding...4 cups non-dairy milk (Silk Almond milk), 1-1/2 cups of your favorite granola cereal, 1 egg, 1/4 cup coconut sugar, 1 tsp vanilla extract...Liberally butter a 9" x 9" casserole dish. Mix granola and sugar together. Combine milk and egg mixture together and mix. Sprinkle granola mixture all over the bottom of the casserole. Pour the milk mixture over the top. I use my fingertips to spread the granola evenly over the bottom. Bake at 350° for 2-1/2 hours.
