Roasted green beans with olive oil and fresh parmesan. yummy side dish. I made these tonight and they were SO---yummy. I did alter the recipe by lowering the oven temp to 350. They came out crunchy, yet cooked perfect. They were not mushy at all. DEFFINATELY making these again! They were a simple side dish....yet I still give theme a 9 out of perfect 10 score.
Parmesan Chicken Bake: This was SOOOOOOO easy, used up my greek yogurt. A super easy meal made straight from the hospital...that's how easy...with rice pilaf and green beans we felt like real people tonight instead of hospital refugees.

4-6 raw chicken breasts, new potatoes, green beans (fresh or canned-really any green veggie would work. Broccoli is good, too). Arrange in 9x13 dish. Sprinkle with a packet of Italian dressing mix and then top with a melted stick of butter. Cover with foil and bake at 350 degrees for 1 hour.
Oven Baked Garlic Parmesan Fries: thinly slice 3 russet potatoes. Coat sliced potatoes in 2-3 tablespoons of olive oil. Mix with 1/4 cup panko bread crumbs, 1/4 cup parmesan, garlic salt, and fresh ground pepper. Bake at 450 for about 20 minutes. FANTASTIC! 10/25/12
