Made this for supper tonight and was delighted with it. A few notes: 1.) I left out the green pepper (didn't have any) and bay leaves (can't stand them). Also, I used dry black beans instead of red (it's what I had). Finished with a dollop of sour cream. Yum!

Beef stew.......This was really good. I used green beans instead of peas and added a little extra ketchup. Only thing I would really change, is to cook it for close to an hour more than it called for. Otherwise the meat won't be tender enough.

Beef Stew...Sauteed garlic, onions, celery in olive oil. Followed the recipe but used leftover beef brisket and peeled leftover baked potatoes. I replaced the tomato paste for 1 can of petite diced tomatoes. Added some salt, lots of pepper and liquid smoke. The family licked the bowl!

Hamburger Stew. So easy and the kids loved it. I added minced garlic, just used about 1/2 lb of meat and used fire-roasted tomatoes. Great weeknight dinner.
