    MONTERREY CHICKEN 4 boneless skinless chicken breasts 1/4 c BBQ sauce 1/4 c real bacon bits 1 c Colby jack cheese shredded 1 14 oz can Rotel tomatoes, drained sliced green onions pepper Preheat oven to 400 degrees. Pound chicken breasts flat. Season with pepper. Grill chicken until no long pink, place on baking sheet covered with foil. Top each chicken breast with one tbs BBQ sauce, 1/4 c cheese, 1/4 c tomatoes, green onions, 1 tbs bacon bits. Bake until cheese is melted (5 min)

    Monterey Chicken ---------- Pound out 4 Boneless Skinless Chicken Breasts to flatten. Season w/pepper. Grill chicken until no longer pink & place on baking sheet covered w/ foil. Top each breast w/1 T BBQ Sauce, 1/4 C Colby Cheese, 1/4 C tomatoes (from a 4 oz drained can Rotel Tomatoes w/Green Chilies, Green Onions & 1 T Bacon Bits. Bake @400 until cheese is melted (about 5 minutes).

    Monterey chicken recipe (about 1/2 way down the page). ***Update; I made this without the BBQ sauce, substituted homemade salsa (1-2 TBSP per piece) for the rotel and used 1/2 the cheese and it turned out really well.
