Banana Coconut Oat Cookies | Blueberry Girl. Modified this recipe a bit: Omitted chocolate chips, dried fruit, and almond meal (just didn't have at home). Omitted 1/4 C oil and added 1/4 C natural peanut butter and 1 tbsp. raw honey. Texture is definitely different with no flour or dairy, but still chewy and delicious!
If you’ve never done this before, you are seriously missing out. Grapefruit is good but broiled grapefruit is GOOOD. The sugars caramelize and the flesh gets a little warm and gooey and it’s a sweet, tangy, brûléed masterpiece for your tastebuds. I highly recommend it.
Blueberry Coconut Pecan Breakfast Cookies [recipe, gluten and sugar free] I played with this recipe a lot because it calls for 3(!!) mashed bananas, and I don't, erm *love* bananas. Still a great idea, but I've taken the bananas out, added applesauce, maple syrup, almond flour, and xylitol. Not this recipe, by a long shot, but a good inspiration!
