Gluten free • Makes 4-6 dozen


1 cup Corn syrup, light

Baking & Spices

2/3 cup Confectioners' sugar
1 Pinch Salt
2 cups Sugar
2 tsp Vanilla extract, pure


12 sheets Gelatin


1/2 cup Water

Homemade Marshmallows -- Corn Syrup: To substitute honey for corn syrup, use exactly the same amount, but reduce any other sweet ingredients, since honey has more sweetening power than corn syrup.

Marshmallows ~ 2 envelopes (17g) powdered gelatin or 17g sheet gelatin (8 to 10 sheets), 1/2 C + 1/3 C cold water, 1 C sugar, 1/3 C light corn syrup, 4 large egg whites (1/2 C) at room temperature, pinch of salt, 2 t vanilla extract or 1 t vanilla paste, 1 C corn starch (or potato starch) + 1 C powdered sugar (for dusting). ~ 25-50 marshmallows.
