    Pumpkin Cake Mix Muffins

    Pumpkin Muffins - only 2 ingredients. That's right, just the cake mix and the pumpkin. No oil, no eggs, no water, nothing else. Bake at 350 for 20-25 mins. This is a Weight Watchers treat, very low cal. Can be frosted with homemade cream cheese frosting for EXTRA yum. Also can add pumpkin pie spice or use a spice cake mix instead.

    DEBRA I bake them until they spring back up in the middle when I push down a little bit..or stick a toothpick in the middle and when they are done it will come out clean.

    Mine also did not cook in the middle. I think adding an egg or two, some water, and some vanilla would have made the world of a difference. The birds will get mine. Next time, I make the cake mix as directed and then add something like pumpkin or grated zucchini. This one just does NOT work at all.

    I tried the springing up and the toothpick and it never came out clean. Oh well. . . .it was an experience.

    I've done this with devil's food cake mix with a cup of mini chocolate chips and it turns out great. 350 degrees for about 20 minutes
