Fresh ingredient dinner. I don't normally keep all these fresh herbs on hand because they are so expensive, but it was a nice change. The basil was divine. The butterfly-cut breasts cooked beautifully in the pan. I added some additional Parmesan and a hint of garlic salt and other seasonings, assuming this might be boring, but I actually think it would be better as the recipe was written. Good clean eating. Artichoke Spinach Cannelloni With Roasted Red Pepper Sauce: if you imagine Spinnach/Artichoke Dip in a pasta rollatini with a delicious zesty pepper sauce, then this is exactly what this recipe is like. So yummy - we partially cooked dried lasagne sheets as we didn't have any fresh lasagne, but it would be fantastic with home made lasagne. Really easy to make and the red pepper sauce was absolutely fantastic. 10/10
