    These carrots are amazing! First carrot recipe I've found that I like! Roast in the oven at 400 degrees for about 20 minutes with some seasoning and a little olive oil (I used curry powder). The recipe said two pounds but I used one. Then drizzle with about 2 tablespoons of olive oil, 3 tablespoons of honey, and about 1 teaspoon of balsamic vinegar (I added a touch more vinegar). Pop them back into the oven for about 5 more minutes to achieve sweet, salty, still slightly crunchy perfection!

    Healthy No Bake Energy Bites. Yummy and super easy to make. 1 cups dry oats 1/2 cup dark chocolate chips 1/2 cup of natural peanut butter 1/2 cup ground flaxseed 1/3 cup honey 1 tsp. vanilla Stir all ingredients together in a medium bowl until thoroughly mixed. Let chill in the refrigerator for half an hour. Once chilled, roll into balls, about 1″ in diameter. Store in an airtight container and keep refrigerated for up to 1 week. Makes about 20-25 balls. Enjoy!
