      Eggs for breakfast sandwiches! Put between English muffin; add cheese, if desired. Spray your muffin pan with some non-stick cooking spray. Crack one egg into each well. Maneuver the spinach with a fork so it goes under the eggs. Sprinkle with a little salt & pepper or whatever seasonings that you'd like. Bake in the oven at 350 for about 15 minutes. Store in refrig up to 6 days.

      Baked Eggs for Breakfast Sandwiches for the Morning Commute (can be prepared in advance). Here's what I learned...I made 3 kinds: scrambled, egg and yolk straight out of the cracked shell, and egg white only. I sprinkled the eggs with salt and pepper before baking and served them on an english muffin with a slice of cheese. I actually preferred the egg white only best. The scrambled egg overflowed from the muffin tin and seemed very dense.

Your eggs should slide very easily from the muffin tin. Let cool and assemble your breakfast sandwiches. To reheat: Wrap the breakfast sandwiches up in paper towel and microwave them for one minute increments in the microwave.

    Mom would appreciate this. For anyone that may not know, the BEST way to make hard-boiled eggs is in the OVEN! Place the eggs in a muffin tray so they do not move around, turn the oven to 325 degrees, pop in for about 25-30 minutes and remove! Not only are they tastier, but they also are much easier to peel!

    4-6 raw chicken breasts, new potatoes, green beans (fresh or canned-really any green veggie would work. Broccoli is good, too). Arrange in 9x13 dish. Sprinkle with a packet of Italian dressing mix and then top with a melted stick of butter. Cover with foil and bake at 350 degrees for 1 hour.
