    Summer Crock Pot Crockpot Sweet and Sour Pork 2 lb. lean pork tenderloin, or other cut of pork, cubed 3 Tbs. soy sauce or teriyaki sauce 1/4 C. cider vinegar 1 small red onion, sliced 2 tomatoes, cut in slices or chunks 2 Tbs. cornstarch 1/4 tsp. ground ginger 1/4 C. packed dark brown sugar 2 green bell peppers, cut into strips

    Apple-Apricot Pork Chops 2 lb. pork chops 1 C. chopped apple 1 C. chopped dried apricot 1/2 C. fresh or dried cranberries (optional) 1/2 C. chopped onion 2 ribs celery, sliced 1/2" pieces 3/4 C. apple juice 1/2 C. brown sugar 1 1/2 Tbs. cornstarch 2 Tbs. cold water Combine all ingredients, except for cornstarch & water, in crockpot. Cover; cook on low for 7-9 hr. 30 minutes before serving, combine cornstarch & water; add to crockpot. Cover; cook 30 minutes more until sauce is thickened.

    Yummy Spinach Casserole Recipe This is a very simple and cheap recipe to make for a spinach casserole. Just add plain yogurt, dry onion soup and chopped spinach with bread crumbs. Ingredients 3 pkg. frozen chopped spinach 1 envelope of dry onion soup mix 1 C. plain yogurt Bread crumbs Directions Cook and drain spinach according to the pkg. directions. Mix spinach, soup mix, and yogurt well and pour into a casserole dish. Top with bread crumbs. Bake at 325 degrees for 30 minutes.
