Baked Mozzarella Sticks. These were pretty good, like the recipe says you have to eat them right out of the oven (when they cool off a little) otherwise they aren't good. The breading was really yummy and they were great dipped in marinara sauce. They weren't as good as restaurant style ones, not as soft and creamy but still good for making them at home. And easy too!
DIY Mosarella Cheese 1 gal. of milk with a bit of citric acid, lipase, and calcium chloride. Slowly heating over medium heat to 88F. Then add rennet and continue heating to 105 F. Turn off heat. Sit for 20 mins. Remove the cheese curds, and lightly smash them to squeeze them as much whey out of them as possible. Microwave for 60 secs. and repeat smashing. Add salt. Microwave again 'till reaches 140-150°F. Knead the hot cheese with a spoon. Continue until you have a soft mozzarella ball.
One gallon of milk will yield about 1 pound of cheese. (I paid $2.39 for the milk, so 1 pound of fresh mozzarella was less than $2.50). Homemade Mozzarella Cheese is one of the easiest cheeses to make, it only takes 30 minutes and the taste can't be beat! - for as much as I love cheese, I should try this!
