Blueberry Mojito: 2 oz white rum 3/4 oz freshly squeezed lime juice 1/2 cane syrup mint leaves blueberries Pour cane syrup into a Collins glass, then add mint; gently press leaves using a muddler, add blueberries and repeat. Add rum and lime juice, then stir well; top with shaved ice and swizzle. Top with soda and blueberries.
To make the soda; combine 1 cup of honey with 1 cup of water and 1 tablespoon of lavender florets (find these in the spice section). Simmer until combined, about three minutes. Strain most of the lavender out and let chill until ready to use. To mix the soda stir in equal parts lavender syrup and lemon juice. Then add equal parts seltzer water to top off each glass. Serve over ice. Enjoy.
