Mozzarella, Pesto, Arugula, and Parmesan Bruschetta Place slices of mozzarella cheese on toasts. Drizzle with homemade or store-bought pesto. Top with arugula and shaved Parmesan cheese, and season with freshly ground pepper.
Roasted Vegetable Tacos with Avocado Cream and Feta: I& made these twice now and they were a huge hit each time. The avocado cream is particularly wonderful. I add black beans to the veggie mix (protein!) and use goat cheese instead of feta.
