Freezer burritos from the "Four weeks to fill your freezer" challenge. These are AWESOME. So easy to make and it makes a ton. I wasn't sure of the size of the enchilada sauce cans so I did 1.5 of the big ones and it was perfect. The enchilada sauce keeps them from being dry. We had our first ones for lunch today, heated for about 2.5 minutes, and they were fabulous.
