Quinoa & Spinach Stuffed Tomatoes - made this and it was delish! A few additions....Brushed the inside of tomatoes with EVOO/Balsamic, added mini pepperoni and cut up mozzarella (string cheese since I didn't have fresh mozza). topped with feta after baking. mmmmmm!
