bacon, egg, and toast cups - an easy but fun breakfast idea!

Bacon, egg and cheese pizza. Pizza dough, eggs, cheese, bacon, onion, bell pepper, scallions, and fresh herbs make this dish a Saturday/Sunday morning regular for sure!

Bacon and Egg Pies. Puff pastry, bacon, eggs, mustard and parmesan or cheddar cheese. Nice breakfast with orange juice and coffee.

Quiche Cups || 10 eggs // 1/4 tsp salt // 1/2 cup milk // 1/2 cup low fat shredded cheese // 2 cup chopped spinach // optional: 6 slices bacon || Cook bacon until crisp (optional). Add spinach to bacon on low heat to warm. Coat muffin pan with nonstick spray. Whisk eggs, salt and milk together. Evenly distribute bacon and spinach mixture into muffin cups. Evenly add cheese to cups. Lastly, pour egg mixture into cups so they are 3/4 full. Bake for 25mins at 350 degrees.
