Meat

2 cups Chicken breast, cooked

Produce

1 (14 3/4 ounce) can Cream-style corn
1 (4 ounce) can Green chiles

Refrigerated

1/4 cup Egg substitute

Baking & Spices

1 (8.5 ounce) box Corn muffin mix
1/4 tsp Red pepper, ground
1 1/2 tbsp Taco seasoning

Dairy

3/4 cup Cheese, white
1 Cilantro and crumbled cotija cheese
1/3 cup Milk, fat free

Prepared

1 (10 ounce) can Enchilada sauce - i recommend going with an authentic mexican brand, red

Carnitas Tamale Pie via Lindsay of Pinch of Yum! You can sub 2 cups of shredded chicken mixed with 1 T of taco seasoning and add 1/2 T of the taco seasoning into the corm bread mix for the carnitas meat. I used all purpose gluten free flour for the flour, and used green enchilada sauce in place of red, and it was AMAZING! We added fresh chopped tomatoes and avocado on the top. ~Julie

* Carnitas Tamale Pie. great use of leftover carnitas meat. will omit the sugar next time. I cut back to 2 tablespoons but I don't think it needs any sugar at all, especially with the corn in there. used an 8x8 pan and would like it to be more meat than tamale so will have to adjust to a bigger dish and increase the meat next time.
