    Skinny broccoli salad Ingredients 2 heads fresh broccoli, chopped 1 head fresh cauliflower, chopped 1/2 cup chopped red pepper 1/2 cup chopped green pepper 1/2 red onion, chopped 1/2 cup green olives 1 cup tomatoes, chopped 1 cup reduced fat sharp cheddar cheese, shredded 1 cup reduced-fat ranch dressing Instructions Mix all ingredients together in a large bowl and toss with reduced fat ranch dressing. We love broccoli salad... I am going to try to tweak mine with the lighter dressing in this recipe. I also use turkey bacon. Make sure to add this right before serving!

Mom always made a broccoli salad with head of broccoli, 6 strips bacon, 1/2 cup onion, 1/2 cup raisins, 1 cup mayo, 2 Tbls sugar, 1-2 Tbls of vinegar. Link goes to a similar recipe. I like the addition of 1 cup sunflower seeds, more raisins, and using honey instead of white sugar.

1 head broccoli, stems removed and florets cut into pieces 4 slices cooked bacon, crumbled 1/2 cup red onion, chopped 1/2 cup raisins 3/4 cup mayonnaise 2 tbsp white vinegar 1 1/2 tbsp honey 1/4 cup roasted no salt added sunflower seed kernels sea salt and freshly ground black pepper to taste Preparation: In a small bowl combine mayo, vinegar, honey, salt and pepper. Mix well and set aside. In a large bowl combine broccoli, bacon, onion and raisins. Gently stir in the mayo dressing. Sprinkle with sunflower seeds and serve immediately.
