4 sweet potatoes 2 oz of low fat cream cheese 1 can of black beans 1 can of corn 1/4 cup pepper jack shredded cheese jalapeno slices crushed red chili pepper flakes and whatever other seasoning you want makes 4 servings...315 calories my new favorite dinner!

Hopefully this will help keep fruit and veggies from going bad too early. Smart things here. I have practiced many of these most of my life. I will add Tomatoes. I do not refrigerate them ever. I have a hanging basket in the kitchen for my tomatoes and if I cut it I eat the entire tomato then and there. They act of chilling a whole or cut tomato sucks the flavor away immediately.

I would LOVE to eat like this! I would have to start by changing my whole diet to be vegan again.. but It actually makes you feel so much better when you eat the foods that grow in your climate at that time!!!

Eat seasonally. Like most countries do. Greater variety, better for the planet as strawberries are not being flown from Honduras so we can eat them in season, better tasting because we're not eating produce made to travel well rather than taste good. And, go to local farmers' markets!
