    Zucchini Parmesan Bites. 4 med. zucchini, sliced in half 1/2 cup fresh Parmesan grated 1-2 tablespoons fresh rosemary & thyme, smidge of olive oil salt & pepper oven to 350F, lightly brush both sizes of the zucchini with olive oil and place on a foil-lined baking sheet. Mix cheese and herbs together in a small bowl and sprinkle over the zucchini along with salt and pepper to taste. Bake for 15 minutes and place under the broiler for the last 3-5 minutes until cheese is crispy and browned.

    Toss chopped peppers, potatoes, zucchini, red onion and sausage (I used turkey kilbasa) with olive oil, salt, pepper and garlic powder. Seal in an aluminum foil pouch and bake at 400 for 40ish minutes. You can also grill this.

    Put a few Tbsp of olive oil in a ziploc with some salt and pepper and the broccoli and shake. Then spread on a cookie sheet and spread minced garlic over it and roast at 425 deg F for 20-25 minutes.

    Whole roasted cauliflower is quite possibly the easiest dish you can make. Just brush with olive oil and let your oven do all of the work!
