This recipe was handed down from my husbands family.  It's a family favorite and you can see from the directions that it is kind of hard to put into a recipe.  It's a lot of work but well worth it.  There is never a dumpling left when this is made.  I have to call my children and let them know that I made them so they can come over and get theirs.  If only they would bring their own bowls.....

Crock Pot Thai Peanut Chicken- add extra peanut/PB and peppers to give a little kick

This is our favorite way to eat broccoli or cauliflower of all time! My husband says he would rather eat this than fries. I put a few Tbsp of olive oil in a ziploc with some salt and pepper and the broccoli and shake. Then spread on a cookie sheet and spread minced garlic over it and roast at 425 deg F for 20-25 minutes.

Spaghetti Squash Au Gratin (Tastes like Hash Brown Casserole without all the calories and carbs): 1 medium spaghetti squash, 2 tablespoons butter, 1 small yellow onion cut in half and very thinly sliced, ¼ teaspoon red pepper flakes, 1 teaspoon fresh thyme, ½ cup sour cream, ½ cup shredded cheddar cheese

To celebrate Cinco De Mayo, or any day, enjoy these loaded nachos without the guilt.  We had these for dinner but this is also great for lunch or as an appetizer. This recipe was inspired by Rocco Dispirito's new book, Now Eat This. I made some adjustments to his original recipe and it was DELICIOUS.
