Coconut & Chicken Curry Soup ** I added a cup of heavy cream and an extra teaspoon of curry and about 2 tsp of salt. The dish was really bland on it's own. Loved it over jasmine rice! It doesn't make a large pot of soup so I might double the recipe next time for more leftovers.

Chicken Curry Soup: Really good! coconut milk in place of cream. poached boneless/skinless thighs in chix broth, carrots, and onion used this seasoned broth for the soup base. (tip: naan isnt that great...)

I will just add more spices to it next time since I thought it was a little bit bland. But I love lentil, and curry, and coconut... so winner!

Coconut Green Curry Lentils - I added in peanut butter (I do this for all of my coconut curries, we're kind of one note sometimes) and the leftovers were gone almost as soon as I put them in the fridge.

red lentil coconut soup ---> just made this for dinner. it can be made in the crock pot. and you could add chicken if you want meat. we put it over jasmine rice and it was fabulous. don't skip the lime juice on top, it really makes it! oh, and i didnt have fresh ginger so i used ground ginger and it was fine. ps... my kids ate it too!
