I've got a few gluten-free folk in the love-bubble, don't I? Here's one for you (and for any I come across in realtime): Gluten-(and dairy- and rice-)free bread, that according to its maker (who has celiac disease to manage) is *wonderful*. BREAD, instead of a pale, gummy substitute.

Gluten-Free Pumpkin Pecan Bread / 27 Delicious Gluten-Free Breakfast Pastries (via BuzzFeed)

1 large egg 5 lg of oat bran 2 Tbs of psyllium husk 3 lg wheat bran 1 heaped tbsp of yeast 6 lg yogurt 1/2 tbsp sweetener (xylitol) 1/2 tbsp grated salt - Amounts for a form of 6 cm x 12 cm - flour of any kind is prohibited! Mixing eggs with sweetener and salt about 1-2 minutes. In a separate bowl mix bran with yeast and put them over the eggs. Add the yogurt and mix well. Pour into a small form (I used a cardboard form 6cmx12 cm) and bake in preheated oven at 180C for about 40-50 minutes.
