VIETNAMESE CARAMEL SHRIMP BANH MI~ 1 baguette cut into 4 sandwich sized lengths and sliced in half, 4 tbsp mayonnaise, 1 lb caramelized shrimp, ¼ cup pickled daikon radish, ¼ cup pickled carrots, ½ cup cucumber thinly sliced, 1 large handfull cilantro, 2 birds eye chilies sliced, soy sauce to taste.

Light Chicken Salad: 1 lb. chicken breast (chopped); 1/2 c. diced red onion; 1/2 c. diced apple; 2/3 c. grapes, halved; 1/3 c. dried cranberries (I'm going to leave these out); 1/4 c. sliced almonds; 1/2 c. Greek yogurt; 1.5 T. lemon juice; 1/2 tsp. garlic powder; salt & pepper.
