Sweet Potato and Black Bean Enchiladas! This is a great starter recipe for a Cinco de Mayo meal. Instead of using prepared salsa, cut up a little fresh jalapeno (no seeds or ribs), some cherry/grape tomatoes, lime juice and fresh cilantro. A heaping scoop of that in the filling would put this over the top. -CanCan
