4 Bell peppers
4 1/2 cups Black beans, cooked
3 large cloves Garlic
1 Green onions
2 Jalapenos
1 Onion

Canned Goods

1 1/4 cup Vegetable broth

Pasta & Grains

2 cups Quinoa, cooked

Baking & Spices

1/2 tsp Cayenne pepper
1 tsp Chili powder

Oils & Vinegars

1 tbsp Oil

Nuts & Seeds

1 tsp Cumin

Dairy

1 1/4 cup Mexican cheese

Quinoa Black Bean Casserole... Delicious on its own or with tortilla chips. Very flavorful and not too spicy, I will be making this again!

Dinner last night. This recipe is a keeper. And foolproof! We even got some of the instructions wrong and out of order, but I don't think there's any way to put these ingredients together in a way that doesn't taste great.
